Yum, Yum, Yum!

Last night Bryan was off work, so we decided to make a few more recipes out of the Gooseberry Patch Fall Favorites Cook Book. We made Quick Risotto with Smoked Gouda, Praline Mustard-Glazed Ham, and Back-to-School Apple Cake. No, it wasn’t cheap, but we got two meals a piece out of the risotto and we’ll be eating the ham and apple cake the rest of the week, so that makes up for a lot of the expense. And it was amazingly tasty…so that made it worth it right there! We substituted applesauce for the apples in the recipes, which saved us a lot of time and it allowed me to cut the oil requirements in the cake. Here’s how I made the cake:

3 c. all-purpose flour
1-1/2 c. sugar
1-1/2 t. baking soda
2 t. cinnamon
1/4 t. nutmeg
1/4 t. cloves
1/2 c. raisins
1/3 c. oil
3 eggs, beaten
1 t. vanilla extract
2-3 c. applesauce (no sugar added kind)
powdered sugar

Combine flour, sugar, baking soda, spices, and raisins in a large bowl; mix well. Form a well in the center; add oil, eggs, vanilla and applesauce. Stir until combined (add more or less applesauce as needed to make a cake batter consistency); pour batter into a greased pan. Bake at 350 degrees for 40 minutes, or until a toothpick inserted near the center tests clean. Mix applejuice and powdered sugar until you have a glaze. Poke a few holes top of cake and pour the glaze on top while the cake is still warm. Serve alone or with whipped cream.

This is the first time I’ve made a cake from scratch and had it turn out moist. I’m a decent baker, but I really like cake mixes. However, this cake turned out great! So yummy! Bryan loves it too. The official recipe calls for walnuts, but Bryan hates nuts, so I didn’t add any. Delicious!

Though, after all my running to the store yesterday to buy the stuff, cooking, and cleaning up I was exhausted. We watched V (which was pretty disappointing) and then I fell asleep at 8:00PM. Nick went to bed at 7:30PM. He was exhausted too.


He wants cake.
